Prepare macaroni according to package directions, omitting salt and fat. Drain and set aside. If using boxed Mac and Cheese, prepare one 7.5 ounce box according to package directions, and set aside.
Heat pan over medium-high heat and coat with cooking spray. Add onion, garlic to pan and sauté for 2 minutes. Stir in tomato paste, chili powder, oregano, and tomatoes; cook 2 minutes until mixture thickens.
Stir in cooked macaroni or prepared Mac and Cheese, canned chicken and 3/4 cup cheese and cook 1 minute. (Omit cheese if used boxed Mac and Cheese).
Optional: Sprinkle 1 tablespoon cheese over each serving.
